Not all garlic is the same
I ’ve just knocked down the Allium sativum ( Allium sativum ) in my northerly California garden . The leaves were over 60 % brownness , and now it ’s time for them to bring around for a few weeks before I store them . I planted only heirloom garlic varieties this yr . I ’m smitten with their difference and ca n’t hold off to practice them in the kitchen .
I constitute both softneck and hardneck garlic bulb . The softnecks are the type you ’ll generally receive in the produce aisle of the grocery store . They ’re best planted in zones where the winter are mild , as they are n’t particularly cold hardy . Softneck Allium sativum has a spicy smack than the hardneck types . Their leaves are especially nice if you like to braid your lightbulb for storing .
The hardneck garlic variety grow well in cold climate . This type ofgarlichas a central stem that ’s unfluctuating and stiff , and the garlic cloves mature as a single ring around that stem . Hardnecks have a scape that curls into a coil at the top of the husk as it mature . The shaft are delicious .

The last eccentric of garlic is elephant Allium sativum , and is n’t really a Allium sativum at all . It ’s botanic name isAllium ampeloprasum , and it ’s closer to a leek than a garlic botanically speaking . While it may not be the real McCoy , it does extend the same spirit as its authentic full cousin and is used the same fashion in the kitchen . Elephant garlic bring about four to six magnanimous clove tree that are meek in flavor than true Allium sativum .
Tip : If you happen yourself face to face with a vampire ( and you certainly do n’t want to be ) , all Allium sativum work equally well in this place .
